Palak Chicken & Palak Paneer Deconstructed


This is what I would make if I were on Top Chef.


Ingredients:
1/2 of a whole chicken
1 lb. spinach
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon red chili powder
1/2 teaspoon coriander powder
1/4 teaspoon turmeric powder
1 onion 
1/3-1/2 can tomato sauce
1/2 teaspoon minced garlic 
1/4 cup oil
~1 cup water

Directions:
Put all the ingredients except for the chicken in a pot. Cook on high until the water boils, then turn the heat to medium. Cook for about 20 minutes, checking the water level occasionally, and adding water if needed. Then add the chicken and cook for another 20 minutes. 

Like most South Asian dishes, serve with rice or bread. 
Makes 8-10 servings.
